Well, Thanksgiving is over. Did you brave the Black Friday deals? Meridith from Diary of a nerd wife and I went to Walmart where we scored some presents for the kiddos. Then we went to Ulta and we were both kind of disappointed with it so we just headed home.

Thanksgiving Food Lineup.

Happy almost Thanksgiving. I cannot wait for this Thanksgiving. We will be spending it with our besties and their kids. I.am.stoked. Our current food lineup is:
  • Fried Turkey
  • Rolls
  • Stuffing
  • Mashed potatoes
  • Slow cooker cranberry sauce ( I will be using this recipe)
  • Green bean casserole
  • Spinach artichoke dip
  • Pumpkin cheesecake
  • Pecan pie
  • Oh and LOTS of wine.

Hey y'all. This weekend was good. We cut Liams hair on Sunday (that is a fiasco because of his Sensory Processing Disorder) we basically had to take our time and get him used to the scissors then get him used to the clippers. It took about an hour of Ben and I taking turns holding him and cutting. After that, I in all my wisdom decided to do family pictures. I ran around like a crazy person, picking outfits, curling Noras hair and asking the boys 90000 times to put their shoes on. Once we got to the lake the kids were amazing. I set up my tripod and took them myself. The kids got a kick out of me running into the pictures and would laugh hysterically as I fumbled my way to them. I love how they came out and I cannot wait to order Christmas cards. Here are some of my favorites...

My Epiphany- 11/14/15

Last night, as I laid in the recliner completely helpless I had an epiphany. I sat there and looked at myself. When did I get to this place? Who was I? I had become a person I didn't like, one I didn't recognize. I sat there as shooting pain raced down my leg and I started feeling sorry for myself. I told myself "tonight is the last night you will feel sorry for yourself. Tomorrow, you will get up out of this recliner, walk to the kitchen, take care of your kids and yourself. Tomorrow, you will not be this person." I had become a sick, lazy person who was on the verge of loosing everything. I refuse to let that happen. I could hardly remember this whole week. I was either sleeping or picking up the kids only to go back to sleep when Mr. Geek got home. I am tired of being sick. I am tired of being lazy. I am tired of being tired. I want to live, I want to have fun and run around with my kids. I want to look in the mirror and not feel disgust. 
 So, this morning I woke up to cuddles with my littles. I got up, made breakfast and did dishes. I wish I could tell you that I got up with gumption but I didn't. I heard a little voice in my head that said I couldn't do it. That I had a cold, I am withdrawing from Zoloft, my back hurts so much it brings tears to my eyes and I wanted to stop. But I didn't. And something amazing happened. The more I walked the less my back hurt, the more I played with my kids the sickness started to subside. Today is the first day of THIS life. I am off to take a shower, get the kids dressed and go to the park. Because today is too beautiful to pass up. And just because I am starting to get excited for Christmas and no post is really done without at least one picture...

Weekly Meal Prep

Hi y'all. Like I said in my post yesterday we like to meal prep for the whole week on Sundays. So, yesterday I set out what I was going to make and had every burner on my stove going along with my oven. I made a double batch of white chicken chili, Mexican quinoa veggie casserole, baked chicken w/lime cilantro brown rice and veggies. Then I made up some baked eggs with cheese on top. All of this only took me about an hour. Well, except for Bailey's food, hers was in the crockpot all day. I started making Bailey's food because she was so picky with dog food and would steal our food off our plate if we looked away for a second. So, I did a little research and found a recipe that she loves and she no longer steals our food. All of the food turned out so good. I will probably have the white chicken chili recipe up soon.

Home Made Ham, Egg and Cheese McMuffins

Hi y'all. Every Sunday we set out to make the weeks menu and meal prep what we can. I always end up making these for breakfast because, they are fast, easy and I know what is in them. Breakfast is not the easiest meal for me to eat, the first meal of the day kills my stomach. But with these at least all I have to do is throw them in the microwave for 45 secs and they are done.
 All I do is grab a dozen eggs, some pre-sliced ham, cheddar cheese slices, whole wheat english muffins and preheat the oven to 350.





I spray the muffin tin with Pam and crack an egg in each space. I top them with garlic salt and pepper. Throw them in  the oven at 350 for 12-15 minutes.





While the eggs are cooking, I make up a delivery line of sorts. I cut 12 pieces of aluminum foil, cut the english muffins in half, add ham and cheese.







Then when the eggs are done, I gently run a butter knife around the edges and they usually  just pop right out.





Straight out of the oven.





I place an egg on top of the cheese then put the top back on.







Tada. Doesn't that look delish?!

These freeze amazingly well also, So I usually put half in the freezer and half in the fridge. Defrost for 30 secs and then nuke for about 15. Aren't they just perfect?! Do you meal prep? What do you like to make for easy meals? I am always looking for something new!

10 Weird Facts About Me

Hey y'all. I have seen this post floating around for awhile so I thought I would do it. Here are 10 weird facts about me...

1. I had a tumor in my right pointer finger and they had to remove the bone and put a cadaver replacement. I never gained feeling back in it. In fact I have stapled it and not noticed until Mr. Geek saw it and pulled it out.

2. I am really OCD when it comes to doing the dishes. Everything has a spot and I will redo the dishwasher as Mr. Geek is doing it. 

3. I am also OCD about numbers. Everything has to be even. The volume on the tv/radio, even the dishes. If there are only 3 bowls to put away (we own 8 nice ones) then I will rewash the third with another so it's even.

4. I can only go to the bathroom in an even numbered stall. I will wait until one opens up.

5. I AM TERRIFIED OF GEESE. Like won't get out of the car if they are anywhere near. They are evil.

6. I talked like Elmer Fudd until I was in second grade.

7. I love tomatoes (I will eat them fresh with some salt) but cannot stand Ketchup.

8. I don't like ketchup but I absolutely cannot stand mustard. Even the look and the smell makes me want to vomit. Working at Burger King was horrible for that reason.

9. I have physical sun damage to my right eye. It has created a bubble that you can see if I look up. That is also the reason I cannot wear contacts.

10. I have two uteri. Logan and Liam were born in the normal shaped one and Nora was born in the smaller heart shaped one located behind the regular one.

Hey Y'all. This Halloween was not all that fun for me. Whomp, whomp, whomp. I had decided to make all the kids costumes this year. I had Liam's and Nora's done on the Tuesday before but I procrastinated on Logan's because I didn't know how I wanted to do it. Well, Thursday night came and I still hadn't started. I stayed up until 2 AM finishing it so he could wear it to school the next day. Come to find out, he did not get to wear it. Then on Saturday every.single.child. decided they wanted to wear something different. Liam flat out refused to even put on his ghost costume, we got Noras on her and she complained that it was itchy. Logan decided he wanted to do a Star Wars costume. Which don't get me wrong, I had no problem with but just tell me BEFORE I stay up all night on the other one. Kids are fun. All the kids and Mr. Geek dressed up as a Star Wars character and I was Batgirl.

I love this one.


 Then to top it all off Nora faceplanted into a big pile of dog poop, then promptly wiped it all over me. At least it was at the end and I didn't have to spend the whole time covered in dog crap. Liam was SO super excited about trick or treating this year. He would run to me and give me a huge hug and kiss after every house. He was so proud of himself and I have to say I was pretty proud of him too. He did not have to use his noise cancelling headphones and he verbally expressed when he was scared or wanted to be held. Hopefully next year is better. At least I found Butterfinger cups. Sometimes you just have to look on the bright side. Ha. How was your Halloween? I hope it was great.
